Malewa originated from eastern Uganda in the Bugisu sub-region in the mountain Elgon region. It is a traditional dish prepared using bamboo shoots mixed with ground peanuts. Bamboo trees grow in the wild and they are harvested young for easy preparation. The malewa dish is a traditional meal for the Bagisu people, prepared on different occasions such as traditional weddings, and family ceremonies and also in Bagisu ceremonies like men circumcision (Imbalu). People eating for the first time may think they are eating pasted smoked meat; it’s delicious when prepared well.

The dish is prepared by soaking the boiled malewa overnight to make it soft and also clean. The hard joints are cut off and remain with the soft parts that are cut into pieces.  Rock salt or soda ash is also added to the small pieces of malewa cut to make it more soft and chewable.

The Nsenene delicacy is made from a particular grasshopper which appears seasonal during the rainy season in April, May, and November. The dish is served as a snack on its own or accompanied as a side dish on sweet potatoes, plantains, or cassava. It’s popular during its season and you may find them on streets in markets and with hawkers selling them in different sizes. The dish holds a cultural significance in some parts of Uganda with many people eagerly anticipating the arrival of their season each year. They are prepared simply by removing the wings and legs of the grasshoppers; and putting them in a clean bowl with water to clean them. The grasshoppers usually have their own oil; there is no need to use oil for frying them.

Groundnut sauce

This is a creamy source made from groundnuts and other spices associated with its taste. It’s the best sauce to serve with Matooke, sweet potatoes, and many other food types. The groundnut sauce/ peanut sauce can be prepared in different aspects. It can be mixed with meat, smoked fish, green vegetables, and other ways. It can also be prepared as a luwombo, therefore, depending on how you prepare this sauce, it gives a wonderful taste once you try it. Eshabwe

Eshabwe is a Ugandan delicacy prepared and originated from the Ankole tribe in the western part of Uganda. Eshabwe is a thick white sauce made from natural ghee, rock salt, cold boiled water, and salt and served on important occasions and in many restaurants. It’s an easy dish to make that uses un-boiled ghee, therefore, make sure the ghee is purely clean without any impurities.
